Tỏi, ớt giã nhuyễn. Pha khoảng 2 muỗng canh nước mắm, 2 muỗng canh đường, 2 muỗng canh nước lọc. Khuấy đều cho đường tan, thêm tỏi ớt vào chén nước mắm.
Ngó sen, cà rốt dùng tay vắt sạch nước, trộn với chân gà đã rút xương, thêm rau răm, húng lũi, nước mắm vắt vào vài giọt chanh. Đeo bao tay nylon, trộn đều, nêm nếm lại tùy theo khẩu vị.
